Grape-variety

Wine harvesting

  • Manual, with small crates of 14-15 kg to avoid crushing the grapes

Vinification

  • Soft crusher-destemmer with large rollers
  • Fermented in stainless steel tubs
  • Two pumping over operations per day until the separation of wine from leeches

Maturing

  • In French oak barrels with capacities of 0.500 and 0.250 liters stored in underground wine cellars and in part in steels tubs placed in an air-conditioned area

Ageing

  • In bottle, from three to nine months

Characteristics

  • Ruby color
  • Intense fragrance of ripe red fruit, iris and cinnamon
  • Fresh, dry and persistent taste
